Only a small sign points to the Sofi Bakery in the Sophie-Gips-Höfe in Mitte. The small bakery is nevertheless well frequented, word has spread quickly that there is not only really good bread here, but also wonderful pastries: The croissants (double-baked and based on sourdough) are definitely among the best in town. The crispy pastries are emblematic of the Sofi concept: traditional baked goods with a little twist.
Instead of using highly processed ingredients, they also work a lot with original grains like emmer or champagne rye. For both the breads and the pastries, the dough is also allowed to rise for a long time before baking. The result: a particularly intense flavor and better digestibility. The secret favorite at Sofi Bakery is not bread, however, but the wonderfully moist "Morning Bun." A crispy dream made of puff pastry with subtle notes of orange, cinnamon and cardamom.
