There are plenty of purely vegetarian-vegan restaurants, but pizza places are rare among them. Luckily there is this cozy little place in Wedding, where chef Elena offers creative and completely meatless pizza. There is, for example, the vegetarian Diavola pizza with organic mozzarella, tomato sauce, smoky carrot slices and hot chili oil. Or the purely vegan Spinachi Verde with delicate almond cream, herb pesto, olives and spinach.
What is not obvious at first glance, but becomes evident after the meal: The pizza dough in Sotto goes through a special production process and is fermented at different temperatures for at least three days. This reduces the need for yeast and makes the dough particularly digestible. And even those who do not tolerate wheat do not have to forego anything.: for a small surcharge, all pizzas are also available in a gluten-free version.
